1 Spin and 2 Desserts today

I really wanted to ride outside today!! I talked to Parker and he was not interested in riding outside. Now let me tell you about Parker. He was riding 100 mile rides with me last season when he was NOT training for anything. He is pretty hard-core! I knew if I could not talk him into riding outdoors there was no one I could convince to ride outside with me.

Plan B: 75 spin session in Jenny’s sweat cave garage. Scott and Carly wanted to get in on that action too. We let them come over even though they are usually late. We had a great spin that almost started on time!

It was probably best that we were indoors because it was pretty frosty outside! 😦

After getting my sweat on I had many more important things to do. I have 2 parties to go to tonight and what am I going to bring? Dessert! If I am coming to your party, it is pretty much a given I am going to make something sweet!

First up: Peanut Butter Candy Bar Brownies
I saw this recipe in December and made it for a dinner party I went too. I changed it a bit. They were a hit! I made it again when I was with my family over Christmas. Again huge hit! Now I do not typically make the same dessert but I have changed it a little both times I made it. Its pretty easy and you can change things to your liking.

Here is the new and improved recipe:
Peanut Butter Candy Bar Brownies
(adapted from My Recipes)
Ingredients:
1 (13.4 oz) package golden oreos-crushed
1/2 C butter melted
1 (14 oz) can of sweetened condensed milk
scant 1/2 C creamy peanut butter
1 tbsp vanilla extract
1 (8 oz) package reeces peanut butter cup “minis”
2 (regular sized) butterfinger-crushed
scant 1/2 C semi-sweet chocolate chips
scant 1/2 C peanut butter chips
scant 1/2 C honey roasted peanuts

Here is how you put it together:
Combine crushed cookies and butter in a medium bowl. (If you have a food processor…USE IT!) Press crumb mixture into bottom of a greased aluminum foil-lined 13″ x 9″ pan, allowing foil to extend over ends of pan. Bake at 350° for 6 to 8 minutes.

Combine condensed milk, peanut butter, and vanilla in a medium bowl, stirring until smooth.

Sprinkle chopped candy bars, chocolate/peanut butter chips, and peanuts over crust. Drizzle condensed milk mixture on top.

Bake at 350° for 27 minutes or until lightly browned. Remove to a wire rack, and let cool in pan. Use foil to lift uncut brownies out of pan. Peel foil away from sides of uncut brownies, and cut into bars.

Note: I probably used too much peanut butter because that mixture was thick and hard to spread!! I just did the best I could!

2nd: Lime and Coconut Crumble Bars
I have been wanting to make these for a while. Different then my normal routine! Lime, coconut, oats, and sweetened condensed milk…YUM!

    Look at you, Miss “two parties in the same night.” Hope you’re having a great time! Wish we had those candy bar brownies right now!!! So yum 🙂 Haven’t baked anything since Christmas, but we did get cookies at Chick-fil-A tonight… does that count? xoxo.

      I had a sugar cookie last night. I finally feel complete since we did not make them at Christmas!! 🙂

    I am in Summer Lake for the weekend, so I brought my CompuTrainer with me. Even though it is only about 25 degrees, I put my bike and CT on the deck and rode in bright eastern Oregon sun. It was great, even though my feet froze!! I wish you had been here with me!

      Oohhhh man Kristy–I wish I had been there too. It was probably just about as cold outside as it was in the garage…but you got some vitamin D!! 🙂

    Ok I seriously want those peanut butter candy bars again — do you think the golden oreos are better than the nutter butters as a crust?! i might make them this weekend!!

      Tough call on the crust. They are both amazing! I’m not even sure I could taste a difference! Let me know if you make them!
