Baking with Connor!

8 Jul

I have a very special guest appearance today! The almost 3 year old Connor. He was my baking assistant this morning OR I was his assistant. He wanted to make something with chocolate and I wanted to make something with peanut butter.

This was going to be the debut recipe back into the life of eating treats again. We settled on Peanut Butter Cup Crack Brownies by Cookies & Cups. They did not disappoint!!

We went this morning to get the goods we needed at the grocery store. We promptly came home and started baking.

Lots of chocolate and lots of peanut butter!! MY FAVORITE!

Making the brownies:

While the brownies were in the oven we needed to chop the pb cups and honey roasted peanuts:

Finally we got to enjoy them:

DELICIOUS!! THEY WERE SUPER CRACKALIOUS!!

Peanut Butter Cup Crack Brownies
adapted from Cookies & Cups

What you need:
1 box brownie mix (not family sized), prepared according to package directions in a 9×9 pan OR you can use this recipe for from scratch brownies
1/2 cup honey roasted peanuts
12 peanut butter cups, chopped
2 cups semi-sweet chocolate chips
1 heaping cup creamy peanut butter
1 cup crispy rice cereal
1 tsp vanilla
1 tsp kosher salt

What to do:
1.Bake brownies according to package directions in a 9×9 pan lined with foil.
2.During last 5 minutes of baking, remove from oven and sprinkle chopped peanut butter cups and chopped peanuts on top. Return to oven for remaining 5 minutes to melt the chocolate.
3.As soon as you pull them out of the oven, spread the melty peanut butter cups/peanuts with an off-set spatula to smooth over top. Let brownies cool.
4.Next in a microwave safe bowl combine chocolate chips and peanut butter. Heat in microwave (or on stove top) for 1 minute, stirring when done. If needed, continue heating in 20 second increments until chocolate chips are melted.
5.Stir in vanilla, salt and cereal until evenly combined.
6.Pour over brownies and smooth. Chill until chocolate is set, about 2 hours.
7.Cut into squares to serve

Do you ever bake with kids? How was your experience? I had a great time. Connor was super helpful!
