Kale, Kale, Kale

Kale is a super-food. Like a food you should be eating often if not every day!! The health benefits are plentiful! A powerful antioxidant, low calorie, a rich source of minerals & fiber, and it has anti-inflammatory properties!

I feel like a lot of people have a love/hate relationship with KALE! I am here to tell you…you don’t have to hate it!! I have a couple great salads to try.

I never really used dressing on my salads until I took a class a bunch of years ago. It is all about using good and healthy ingredients. I made them by hand for a while or used my big Cuisinart. I finally got a mini-Cuisinart. (I mainly just use it for dressings)

KALE GINGER SALAD
What you need:
1 or 2 bunches of kale –chopped or torn
handful of carrots –chopped or shredded
1/3-1/2 red onion
cilantro –finely chopped
1 avocado
handful of toasted almonds

Optional: (handful) toasted sunflower seeds or pumpkin seeds

Ginger dressing:
1/3 cup olive oil
1 tbsp. toasted sesame oil
2-3 tbsp. apple cider vinegar
Juice from 1 lemon
1 tbsp. raw honey
1 inch piece of ginger, chopped or grated
2-3 garlic cloves
salt and pepper to taste

How to do it:

Dressing: mix vinegar and honey first and then add the rest of the ingredients in. Blend or mix by hand(if by hand–try to chop the ginger/garlic finely)

I thought this was cool. You can see the layers of the vinegar, lemon, and oil.

Pull kale leaves off stem and chop or tear into pieces.
Pour dressing over the kale and massage into the kale.
Put the rest of the veggies in.
(I usually put in the refrigerator and let set)
Toss when ready to eat!

BEET KALE SALAD
What you need:
1-2 bunches of Kale –chopped or torn
3-4 beets (depending on how many you like–small/big)
1/3-1/2 red onion
handful of toasted almonds
1/2 cup crumbled feta

Dressing:

1/4 cup olive oil
1/3 cup apple cider vinegar
1 tbsp. raw honey
2-3 cloves of garlic
2 tbsp. of fresh dill
salt and pepper to taste

A couple of TIPS:
*These are ALL approximate measures. For the dressing: I just pour into the chopper so it always tastes different. I use ingredients that I have on hand. If I have to buy a whole package of dill then I will make that salad a couple of times to use it all. Use what you like. I like a lot of “stuff” (veggies, etc) in my salads just like I like a lot of “stuff” (chocolate chips, etc) in my cookies. I am not a huge onion fan so I don’t use as much as someone who likes onion would.
*If you take anything from this post it is to massage the dressing into the kale. Don’t be afraid to get dirty on this one!! πŸ™‚

*I like to make the salad at least a few hours before if not the night before. It just lets the kale marinate and soften a bit before you eat it!

    I would LOVE that salad! So good! I usually make kale chips or grind my kale in smoothies. I am just starting to dig the salad thing. Costco has a bag of superfood salad that I just bought. It’d be great with your dressing!

    The kale-ginger salad looks heavenly! I had kale for the first time last year and I prefer it to spinach now. All of my favorite juices have kale and ginger in them. Such a great combination πŸ™‚

      Oh yeah!! You can use any greens and ingredients you want with those dressings!! That is the beauty of them!! πŸ™‚
